Wish you all a Happy Makar Sankranti & Pongal. Traditionally at my place, we celebrate this special day with Khichdi and Jaggery Ladoos. This time we thought let's make a combination of both. Today's recipe is Sweet Pongal or Sakkarai Pongal or Jaggery Khichdi. Let's get started!

Jaggery Khichdi
Jaggery Khichdi
Ingredients -
- Half cup White Rice
- 1/4th cup Moong Dal
- 3/4 cup Jaggery (I am using jaggery powder)
- 2 pinch Cardamom Powder (Elaichi Powder)
- Ghee
- Kaju
- Raisins
- Water
Making Process -
Step 1. Soak Rice and Moong Dal for 15 minutes.Step 2. Take a pressure cooker. Add soaked rice, soaked dal with 2 & 1/2 cups water, and cook it until 4 whistles.
Step 3. Take a separate pan. Add 3/4 cup Jaggery with 1/4 cup of water and mix until the jaggery is completely melted.
Step 4. Using a sieve, add the melted jaggery to the pressure cooked rice & dal mixture. Mix well.
Step 5. Add 2 tbsp Ghee and Cardamom Powder, cook it on low flame for 2 more minutes.
To Garnish -
Step 1. Take a pan. Add 2 tbsp Ghee in it.
Step 2. Add 10-11 Cashew Nuts and Raisins and fry till golden brown.
Step 3. Garnish the Jaggery Khichdi with the dry-fruits.
Your delicious Jaggery Khichdi is ready! Serve hot!!
Note - This recipe is a little less sweet. You can add more Jaggery if you would like this to be sweeter.
