Khandvi | Recipe

In today's post I am sharing my absolute favorite Gujarati dish called Khandvi. I can eat Khandvi day and night, the only problem is I didn't find this anywhere here (USA) till date. Personally I never like to make Khandvi at home as the process seems difficult and tricky. After two times failure I finally found the exact measurement and ingredients which makes the perfect Khandvi, tasty & delicious. In today's post we are making this popular Gujarati dish Khandvi. I tried to make this recipe method as simple as I can, although it's lengthy and tricky. Let's see what we need for this tasty dish!!!

Khandvi | Recipe


Ingredients :-


For Batter :-
  • 1 cup Besan (Gram flour) 
  • 1 cup Curd
  • 10 ml Water
  • 1/4 tsp Haldi (Turmeric Powder)
  • 2 tsp. Ginger- Green Chilli Paste
  • Salt to taste

For Tadka :-
  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Sesame Seeds
  • 5-6 Curry Leaves

For Garnishing :-
  • 2 Pinches of Red Chilli Powder
  • Finely chopped Coriander Leaves
  • Grated Coconut (fresh or dry)

Method :-


For Khandvi :-
Step 1. In a big bowl; add all the Batter Ingredients and by using hand blender mix everything together until you get a smooth paste. Hand Blender makes this process easy, make sure there are no lumps remaining.
Step 2. Prepare the working surface before as later we won't get much time, you can use back side of the thali. I am using back side of the Baking Tray!! Properly spread the Oil all over the back side of the tray or thali.
Step 3. In a non-stick pan; pour this mixture and start cooking it on slow flame.
Step 4. Keep stirring the mixture otherwise it will stick to the pan. Continuously stir till the mixture starts getting thick. It takes around 10 minutes.
Step 5. Take 1 spoon of the mixture and pour it into the grease tray or thali, spread it with the knife. Leave for few seconds and start rolling it. If it came out (roll-out) properly it means your mixture is ready.
Step 6. If the mixture sticks to the thali it means you have to cook for 2-3 more minutes.
Step 7. Once your mixture is ready, take one portion and spread it onto the thali.
Step 8. Then take other portion and spread it again.

Note :- You have to be very fast while doing this process otherwise your mixture will get thicker and won't spread. Also work with 2-3 portions first, don't pour it together if you feel you can't spread fast.

Step 9. Once all the mixture is spread out, cool down for a minute! Start cutting long strips (around half inch)
Step 10. Once the whole mixture is completely cooled down, start rolling the Khandvi from one direction. Be very gentle otherwise you may break those.
Step 11. Place all the Khandvi in the Plate.

For Tadka and Garnishing :-
Step 12. Heat the Oil in Small-Pan or Tadka-Pan. Once Oil is ready add Mustard Seeds and Sesame Seeds.
Step 13. Once seeds starts crackling add Curry Leaves and sauce for a minute.
Step 14. Pour this Tadka all over the Khandvis.
Step 15. Sprinkle a pinch of Red Chilli Powder and garnish with grated Coconut and chopped Coriander.
Your delicious mouth watering Khandivs are ready. Enjoy this with a hot cup of Coffee or Tea.

Note :- Khandvi is very tricky so please take a note of exact measurements and ingredients. Don't try to change it if you are making it first time.
