Kaddu Ki Chatpati Sabzi | Pumpkin Recipe

Today we are sharing Indian Style Kaddu ( Pumpkin ) Sabzi Recipe with step by step instructions.

Today we are sharing Kaddu ki Chatpati Sabzi. Do you know that Pumpkin contains Fiber, Vitamin A & C, Potassium, and a lot of other nutrients, which all makes it a very healthy option as a food. Not only this Pumpkin is very good for the people who want to go on low-calorie food as it is 94% water.
So with all these wonderful benefits lets prepare today's recipe of Pumpkin Sabzi or Kaddu ki Sabzi.


Pumpkin Sabzi | Recipe

Ingredients -

  • 750 gm Pumpkin (cut in cubes)
  • 3 tbsp Oil
  • 1 tbsp Ginger Paste
  • 1 tsp Fenugreek Seeds (Methi Dana)
  • 1 tsp Cumin Seeds (Jeera)
  • 1 tsp Mustard Seeds (Rai)
  • Pinch of Asafoetida (Hing)
  • 1 tbsp Coriander Powder
  • 1 tsp Garam Masala
  • 1/2 tsp Turmeric Powder (Haldi)
  • 1 tsp Chilli Powder
  • 1 tbsp Aamchoor Powder
  • 1 tsp Sugar
  • Salt to taste
  • Fresh chopped Coriander for Garnishing


Method -

Step 1. In a pan; heat the oil. I am using Mustard seed oil.
Step 2. Add Asafoetida, Fenugreek Seeds, Cumin Seeds, and Mustard Seeds.
Step 3. When the seeds begin to splutter, add Ginger paste.
Step 4. Saute for few seconds till they turn to golden color.
Step 5. Add chopped Pumpkin and saute them until covered with all the oil.
Step 6. Add Turmeric, Coriander Powder, Garam Masala, Chilli Powder and Salt. Mix it well.
Step 7. Cover the pan with the lid and cook in a lower flame. Keep stirring in between.
Step 8. After 5 minutes, add Sugar and Aamchoor Powder. Mix it well.
Step 9. Cover again and cook for 3-4 more minutes, keep stirring.
Step 10. Check whether pumpkin has become soft and infused with all the Spices (Masala). If Yes! remove from the flame, otherwise cook for 2-3 more minutes.
Your mouth-watering Pumpkin Sabzi is ready. Garnish with fresh coriander leaves and serve hot.
