Method -

Step 1. Wash and rinse the Mordhan 2-3 times to make sure there is no dirt left. Just like regular Chawal / Rice.
Step 2. Soak the Mordhan in enough water and leave it overnight. Leaving overnight helps the mordhan's cooking process fast.

Step 3. In the 1st Pan, heat the oil.
Step 4. Add Peanuts, Cashews, and Almonds. Saute these for 2 minutes.
Step 5. Add Dry Coconut Slices and saute for one more minute, till all the dry fruits change the color.
Step 6. Remove all the Peanuts, Almonds, Cashews, and Coconut Slices from the Oil.

Step 7. In the same Pan (Oil), add Cumin Seeds and chopped Green Chilies, saute for a minute.
Step 8. Add boiled chopped Potatoes, 1 tsp Red Chili Powder and little Sendha Namak (salt).
Step 9. Give it a good mix and cook for 5 minutes.

Step 10. Meanwhile, in 2nd Pan, add 1 cup Soaked Mordhan and 2 cups Water.
Step 11. Cook it for 6 to 8 minutes on medium heat. You can cover the Pan with the Lid, this will cook faster, just keep eye on your Mordhan.
Step 12. Once the Mordhan is cooked, transfer it to the 1st Pan.

Step 13. In the 1st Pan, after 5 minutes of cooking Potatoes, add cooked Mordhan. Give it a good mix.
Step 14. In the same mixture, add Peanuts, Cashews, Almonds, Coconut Slices, 1 tsp Red Chilli Powder, Lemon Juice, and more Sendha Namak.
Step 15. Give everything a good mix and cook for 2-3 minutes more.
That's it! Your Sudama Ke Chawal is ready to serve.

Tips -
1. It tastes so good with Curd or with Vrat ka Raita.
2. If you like to eat Coriander then add the chopped coriander too. I don't like it, that's why not adding here.
