Palak Paneer

Hello my Beautiful People :)
I am not fond of green vegetables since childhood. Also I don't like milk so my family were always worried about how will I get nutrients. Once my mom prepared me a dish & it was so delicious. Whenever I wanted something special I always used to tell mom please prepare that.
Later when I started cooking on my own I asked mom about the dish & I was surprised to hear that the dish was containing a green leafy vegetable Palak & a dairy product Paneer (Cottage Cheese). It was Palak Paneer which I am going to share today. I like it because it gives you good nutrients including iron & protein.
Palak Paneer is one of the favorite recipes of India. You can also substitute Tofu instead of Paneer. It goes well with Rotis, Naan, Jeera Rice or Biryani too. So lets start preparing Palak Paneer for today's food.

Method  :-

To create Spinach puree :-

Step 1.  Rinse the palak or spinach leaves very well in running water. You can keep stems if you like otherwise you can discard them.
Step 2.  Boil 3-4 cups of water in a pan & add spinach leaves in that. Keep it for 2-3 minutes so you get rid of the raw taste of spinach. Don't overboil the leaves otherwise spinach will leave the natural texture.
Step 3.  Strain the spinach leaves & immediately put it under cold water. Cold water is required for spinach to retain its texture.
Step 4.  Using a grinder make a puree of the spinach.

For Palak Paneer :-

Step 1.  Take garlic, chopped onions, ginger, cashew nuts & green chillies. Grind them together to make paste.
Step 2.  Take a pan & put butter in it.
Step 3.  Once the butter is melted add the paste from Step 1. Cook until it changes a slight color.
Step 4.  Add the tomato puree in the pan & garam masala and cook for 2-3 minutes more.
Step 5.  Add curd and cook for 2 minutes.
Step 6.  Now add the spinach puree and stir well. Add little water ( it may depend upon the consistency you want ) & keep stirring.
Step 7.  Add the paneer cubes. Cook for 1-2 minutes

Your Palak Paneer is ready.

Note  :- One important point to notice is not to cover the lid of the pan as we do for other vegetables.

You can server Palak Paneer with any of your favorites naan or roti.
