Kaju Mathri Recipe

Diwali festival is here and we all know how many different variety of foods we prepare and eat during this time. I always try to look out for new recipes specially during Diwali. When I was kid, my mom used to cook food making it look in different shapes which I loved the most. I remembered one of my Mom's similar recipe from childhood which I am sharing today called as Kaju Mathri. I love this very much & I hope you guys will love too. Its not only beautiful but also very tasty. Lets being the recipe.

                         Kaju Mathri Recipe

Ingredients :-

  • 3 cup  All Purpose Flour / Maida
  • 1 cup  Rawa / Suji
  • 2 tsp Oil for Moyan
  • 2 tsp  Carom Seeds / Ajwain
  • 1 tsp Salt
  • 1 tsp Chaat Masala for Dusting
  • Luke warm Water to make Dough
  • Oil for deep Frying
  • Water bottle Cap / Lid

Making Process :-


Step 1.  Take a bowl & mix Maida, Rawa, Ajwain & Salt. Mix it well.
Step 2.  Add Oil for Moyan in the center of the mixture. Mix it well again.
Step 3.  Add water & start making a dough. Cover the dough with dry muslin cloth and let it rest for 15 mins.
Step 4.  Divide the dough in slightly bigger size equal balls.
Step 5.  Take 2 balls & press them respectively. Put one ball on top of other with a little oil between them. As shown in photo. This step will help to give effect of 2 shelf like actual kaju.

Step 6.  With the roller roll out into 6-7 inches diameter disk of medium thickness.
Step 7.  Take a Cap / Lid of bottle & cut an arch as shown in photo. Separate the piece & keep on making another arch on top of other arch to give the proper Cashew / kaju nut shape.

Step 8.  Heat the oil in a pan. Fry Kaju Mathris in medium flame till they become light golden in color.
Note :-  If you fry them on high flame they would look cooked soon but inside would remain uncooked. To get crispiness cook on medium flame.
Step 9.  Now dust your Chaat Masala onto Kaju Mathris. Mix it well.
