Puran Poli

Puran Poli is one of my favorite recipes. Also called as Indian Sweet Flatbread this is a traditional Maharashtrian dish. I agree that this recipe takes some time to prepare but the results are also worth it. It can be made any day and is also very popular during the festivals days. Lets begin.

Puran Poli

Ingredients :-

For the Dough :-

  • 2 cups Whole Wheat Flour
  • 2 tsp melted Ghee
  • 1 tsp saffron (kesar)
  • Milk

For the Filling :-

  • 1 cup Chana Dal
  • 1 cup Sugar
  • Pinch of saffron (Kesar)
  • 2 tsp Ghee
  • 1/2 tsp Cardamom (Elaichi) Powder

Method :-

For Dough :-

Step 1. Take whole wheat flour in to a deep bowl, to that add pinch of Kesar & Ghee mix well.
Step 2. Add milk little by little and start to knead the dough. Using Milk will make your dough soft.This dough has to be little loose and soft.
Step 3. Cover and leave it to rest for half an hour.

For Filling :-

Step 1. Rinse the Chana Dal first very well in water. I didn't soak the Chana Dal but you can also soak the chana dal for 30 minutes and then drain the water.
Step 2. In a pressure cooker, cook the Chana Dal for 5 whistles. If you soak the Chana Dal, the cooking time will be reduced. Allow the steam to escape before opening the lid.
Step 3. Drain any excess water and mash the dal lightly.
Step 4. Dissolve the saffron in a little water and keep aside for 15 to 20 minutes.
Step 5. Heat the ghee in a broad non-stick pan, add the Dal and Sugar. Add the cardamom powder and saffron mixture, mix well. and cook on a medium flame for 20 minutes or till the mixture thickens, while stirring continuously..
Step 6. Cool slightly and keep aside.

Making Process :-

Step 1. Roll out one portion of the dough & make a ball.
Step 2. Flatten each ball in your palm, stuff with one portion of puran (stuffing), cover and seal the edges.
Step 3. Dust it with flour and roll out into four to five inches diameter disk of medium thickness.
Step 4. Heat a tawa and cook puran poli until it turns golden brown in colour on both the sides. Remove form pan.
Step 5. Smear a little ghee on each Puran Poli and serve hot.
